6 Easy & Delish Salad Dressings Using Hummus!

photo 2

I wish hummus had a much cooler name or, at the very least, a name that accurately reflected how delicious it is! I’ve heard it made fun of in more than one movie. Despite the mockery, (let’s face it, vegan are used to mockery), hummus is one of my most favorite foods! (Actually, I’m truly in love with the chickpea in all its glory…see my recent post titled “The Best & Easiest Garbanzo Bean Salad…plus the Health Benefits of the ‘Chic’ Chickpea”) But I digress…Why do I love hummus? Maybe because it’s easy to just grab and start dipping all sorts of food in it, maybe because it can be flavored in many different ways, also it’s pretty easy to make—of course, because it’s loaded with all the benefits that chickpeas have to offer!  And the supermarkets and farmer’s markets are stocking so many varieties now. So convenient! Sometimes I think I could live on hummus alone–and if that makes me a weirdo, then so be it.

Adding hummus to a dish somehow always seems to improve it. I decided to see if it would work its wonders as a base for salad dressing and, omg, this salad dressing is amazing! Most of the creamy dressings out there have mayo in them but mayo is fattening and it’s better to use it sparingly. I’m talking about vegan mayo, of course.  Also, I do like a dressing with a little weight in it, instead of the flimsy, liquidy type. Salad dressing is one thing I do not want to use sparingly. After messing around and coming up with this simple gem of a hummus salad dressing, that you must try and tell me how much you love, I hunted around for a few more interesting ones to share with you. I certainly know that mine is a winner and I can’t imagine using anything else now.
