Simple Superfood Drink With Coconut Water And Chia Seeds

Since I recently bought a huge box of Vita Coco coconut water at Costco, I decided to experiment with making fruity coconut water drinks. When I opened my refrigerator today, I immediately saw that I had an overabundance of blueberries from my CSA pick-up this week. Clearly, my first blended coconut water drink would include blueberries. I pulled my recipes file down from the kitchen shelf and immediately found this simple drink which was posted last year on Candle Cafe’s website. This was one of the smoothie recipes that Candle Cafe created in collaboration with The Killian Mansfield Foundation’s Aromatherapy Initiative, a project to empower children with cancer to feel better through self care.

This is a very simple drink to make and it is packed with nutrients, including Omega 3 and protein from the chia seeds. I was previously blending my smoothies with almond milk, but this is so much lighter and more refreshing. I drank one after my workout this morning and I think I will make it part of my daily post-workout routine. I took the liberty of adding 1/2 cup of ice cubes, which was not included in the original recipe.


One Serving


1/2 cup  Coconut Water

1/4 cup  Blueberries

1/4 cup  Strawberries

1/2  Banana

1/2 cup  Ice cubes

1 teaspoon Dry Chia Seeds


Blend coconut water, fruit and ice cubes until well mixed. Then add the chia seeds for 30 seconds, with the blender on low. Let the drink sit for about 5 minutes.
